Okay so it's my birthday

Hip Hip Hooray Hip Hip Hooray Hip Hip Hooray!! Now that we have that out of the way, I gained a pound this week. Booo Booo!!! I weigh 170 right now. Goal is 160 by weigh in. Tonight is a time to celebrate. Burgers and fries, cake and ice cream all around which means I have to work out for two hours this afternoon. You too Kerry and Charlene Drummond. Last week was pretty good I worked out a few times. Everyone needs to encourage people to keep blogging on time so there is no extra money wasted. Have a great week. Below you will find the low fat desert of the week. They are only 3.5 points. try them!!
Ingredients:

For the base you need:

175 g (6 oz) crushed semi-sweet whetmeal biscuits

55 g (2 oz) low fat spread ("I can't believe it's not Butter" would do)

For the topping you need:

3 tsp gelatine

1 cup of low fat cottage cheese

175 g (3/4 cup) low fat soft cheese

55 g (1/4 cup) caster sugar

2/3 cup low fat cream

Grated rind of 1 lemon

a punnet of strawberries (8 oz?) to decorate.

1 tsp of coconut essence (for luck!)

This is what you do:

First, crum the biscuits.

Prepare a baking tin by spraying cannola oil on the base and around. Place the crums on tin, spreading them evenly. Put the tin in the fridge for the time being.

Now, sprinkle gelatine over 3 Tbsp water in a small bowl and set aside for about 3 minutes.

Then place the bowl in a saucepan of hot watter and still till it dissolves. Let it cool for a while.

Blend together the gelatine, cottage cheese, soft cheese, caster sugar, cream, coconut essence and lemon rind till smooth.

After that, pour the mixture into a bowl and stir in the strawberries.

Pour the straberries-cheesecake mixture onto the crumbs in the tin, and chill in the fridge till set.

Once the cheesecake is set, you can cut it into individual squares and serve it.

This low fat cheesecake recipe is pure heaven!

Happy Birthday Steven! I can't wait to eat burgers/fries/cake and ice cream with you tonight to celebrate your 30 years of living! I did not lose weight this week, but I did get a few good workouts in. I owe $4 for a tea and soda. I cracked!

Happy Birthday my special little man! I remember when.... Thirty years ago,well I won't go there.(: I didn't lose any weight this week, had a pretty good work out twice in the gym and all week-end with my other special man. Oh yea oew $2 for a soda sick stomach.

HAPPY BIRTHDAY STEVEN! Did you get our text message? I didn't lose any weight this week. Doggonnit! I was doing great until a customer allowed us to pick apples off of his tree, you know what that means apple pie ala mode, it was the bomb if I must say so myself. I'm at 140 pounds and ready to get back to it. I've been walking five days a week and this week I'm starting water aerobics twice a week. Enjoy that birthday food, I've always heard birthday dinner and desert have no calories or fat so don't you dare waste it on your special day. 30 years young! Whew, it's hard to believe I was only 9 when you were born. hahahhaha LOL!

Dang Steve, only 30, let me know when you get me and your Mom's age then we can talk. Right now you're still wet behind the ears, not too far behind your son, I bet your skin on your butt is as soft as your boy,Brennan's. Other words when your feet get crustey then we can communicate. I lost 1 lb, haven't had any chocolate, (the miller lite is still good though) as you know my busy season is coming so the weight should be falling off any minute now. Happy Birthday!

Hi Everyone! Things are going slow but steady. I lost 2 pounds this week and I owe you noooo money. Question if I spray PAM on my food is this considered fried food? Just want to be clear. I made some Baked fried chicken this Sunday from a recipe that me and Cooky use to do back in the day from an Oprah book. You have to spray it with PAM.
