This peach cobbler recipe is quick, easy, and delicious. It uses less fats and sugars than most cobbler recipes, so it's much healthier too.

Weight Watchers Light Peach Cobbler recipe
Makes 8 servings

Ingredients
6 medium peaches (fresh or frozen), sliced
1/2 cup nonfat milk
6 1/3 tablespoons sugar
1 teaspoon fresh lemon juice
1 tablespoon cornstarch
1 1/2 teaspoons baking powder
1 cup all-purpose flour
3 tablespoons reduced-calorie margarine
1/2 teaspoon ground cinnamon
1/2 teaspoon table salt

Preparation
1. Preheat the oven to 375° F.
2. In a large saucepan, combine the peaches, 1/3 cup of the sugar (5 1/3 tablespoons), lemon juice, cornstarch and cinnamon; toss to coat the peaches.
3. Place the pan over medium heat and bring to a boil.
4. Cook until the mixture thickens (about 1 minute).
5. Remove the pan from the heat and transfer the mixture to an 8-inch square baking pan.
6. To make the topping: in a large bowl, combine the flour, baking powder, the remaining tablespoon of sugar and salt.
7. Work in the margarine with a fork until the mixture resembles coarse crumbs.
8. Add the milk and stir until the flour mixture is evenly moistened.
9. Drop 8 tablespoons of the topping mixture onto the peach mixture.
10. Bake until the topping is golden brown and the filling is bubbly (about 20-25 minutes).
11. Cut into 8 pieces and serve.

Who do you guys think will win the prize this weekend??? Alma is my darkhorse.

dimples said...

I think that it is between Alma, Charlene, and Kerry. We need to see more overall results this next four months. I know that I did not do my best this first round. I pledge to give up CAFFEINE. That includes chocolate, tea, and sodas. Say a prayer for me!

I pledge to give up Mac n' cheese.

Junior said...

What have I gotten myself into? It is hard to give up good food!

Mary said...

I have already give up potato chips and cutback on sodas which I didn't drink many of anyway and it didn't do me any good. And I have had only 1 Thickburger since Easter. I guess I am going to have to cutback on sweets or maybe give up french fries. That's too hard. I have to think about it. The peach cobbler recipe looks good.
I choose OJ or Arthur to win this round. Men always start off better than women.

Congrats to Kerry! I pledge to give up sugars excluding fresh fruit. Watch out Kerry I am on your tail.

dimples said...

Kerry you have some competition now. It is on!!!!

Mary said...

Congrats Kerry. I was sure that one of the fellas would win the first round. Can we say "GIRL POWER!"

I pledge to give up french fries and cutback on sweets.

First I want to start by saying ALLERGIC is the proper spelling Steven :) But thanks for getting this started I feel this is going to be a hit.

Next, Kerry I am so happy for you!!! I was with Maryruth I thought it would be a male to win but Kerry you have showed us that they have a real fight on their hands. I am so proud of all of us and I look forward to the coming months to see the changes in each of us. As for me I have to make some major changes if I want to see some results. So my pledge is to give up fried foods. For me this will be hard but I need to make some big changes if I want to get healthy.

Question? Are we to send Kerry's well deserved prize money to you Nicke of just straight to her? Also how often are we supppose to log in? once a week? Steven is there a way for us to post pictures and things?

Congrat Kerry...I pledge to give up french fries for the next four months, but get ready peeps cause it is the summertime which means BBQ's.

OJ said...

Also how are the % being figured up, so i can est how much i need to lose to reach a certain %?

MimI said...

Good Job Kerry.I'm a little disappointed in myself, but the heat is on .I plan on giving up Fast food for five days a week. It's going to be hard,I'm determine to do it. Right now a pot of pintos and smoked Turkey legs are in the crock pot cooking(yummy) for dinner.

Mary said...

OJ: You divide the # of pounds lost by the original weight and the hit the % key.

Mimi: I'm coming to eat dinner with you.

If we cheat how much do we have to put in our jar?

Happy, Happy Birthday Sommer,You're looking great for a fine brown 29 years old. Remember to tell your friends to buy you an angel food cake with fresh strawberries and low fat cool whip to celebrate. Have a wonderful, birthday.
Love ya!

dimples said...

Steven and Kerry, what are you two giving up? Where is Cooky's post? Steven you need to get on the ball with the guidelines.

FreeBlackDove said...

Thanks everyone for the birthday shoutouts!! another year to be thankful for and a reminder of what I need to work on. I know I listed that I was giving up fried foods but lets be real I was fooling myself. So to be more realistic I will pledge to give up fried foods six days out of the week and allow myself a free day. I hope this will be ok and will go along with what we have setup here because truthfully fried foods are my weakness whether it's chips or wings. So if it's a problem please let me know before the cut off Friday. Love ya'll

Mary said...

So I guess we are not starting this until Monday right 4/28? I've already started so that's fine.

Sommer- your pledge sounds fine to me. Because mine is to give up fries and CUTBACK on sweets which means that I can have sweets just not everyday. So maybe I should say have sweets no more than 3x a week.

dimples said...

People, ya'll are killing me. This does not suppose to be easy. Easy is how we became overweight to start with. You are either GIVING UP something or you are not. Cut backs, six days a week, where is the committment people?! Steven posted that the "give ups" need to be posted by Friday which means it starts on FRIDAY! But in saying all of that, do what ya'll will because that will give me a better chance at winning. I refuse to go to California or throughout this year the size I am now, how about ya'll?

I think we are all aware and agree that none of this is easy. I know my bad habits and where they have led to and with this information I am able to determine what is best for my body and what needs to be done. Up until recently I have ignored the knowledge but along with everyone else I am ready to make the changes. The pledge I have made and will keep is to commit to no fried foods for six days out of the week and for me this is in no way easy and I feel the benefits will be great. I could pledge for one thing but one thing will not benefit me the most. We all have our habits and the point of this program is to help alter those negative habits. Each individual has to do what is best for them. I am excited and commited to our family program here and can not wait to see the positive changes in each of us.
Oh and Dimples...I ain't scarrrred:)

You are right Nicke, my final pledge is giving up French Fries for four long months.I can do it, I will do it!We have a competition going, who will be the biggest loser the second time around!

Mary said...

I agree dimples. We all want to go to the land of fun and sun looking our very best especially if youplan to wear a swimsuit. We have 3 months so let's it on the ball!

Kerry said...

We sure are a feisty bunch! Oh, and watch out because I may will again this round! I love my new running shoes! I'll have to take a picture and post it on our blog!

OJ said...

Not eating french fries is not so bad anymore. I started this at the beginning of the competition and decided to continue it. My tip for the week is for the chicken lovers. "Eat white meat and not dark meat the dark meat stays with you and the white meat passes thru.

MimI said...

Thanks OJ for that tip, I didn't realize that!
